Ingredients

For the Pancakes:

  • 1 ½ cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ¼ cups buttermilk
  • 1 large egg
  • 2 tablespoons melted butter

For the Bananas Foster Topping:

  • 2 ripe bananas, sliced diagonally into ½-inch pieces
  • 4 tablespoons unsalted butter
  • ⅓ cup brown sugar
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons rum or bourbon (optional)

Instructions

Preparing the Pancake Batter

  1. Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. Combine wet ingredients: In a separate bowl, whisk the buttermilk, egg, and melted butter until smooth.
  3. Make the batter: Pour the wet ingredients into the dry ingredients, stirring until just combined. A few lumps are okay! Overmixing can make the pancakes tough.
  4. Let the batter rest for a few minutes while preheating a griddle or non-stick skillet over medium heat.

Cooking the Pancakes

  1. Lightly grease the griddle or skillet.
  2. Pour about ¼ cup of batter for each pancake, cooking until bubbles form on the surface.
  3. Flip and cook for another 1-2 minutes until golden brown. Transfer to a plate.

Making the Bananas Foster Sauce

  1. Melt butter in a skillet over medium heat. Stir in brown sugar and cook until dissolved and smooth.
  2. Add cream and vanilla while stirring constantly to create a glossy, rich sauce.
  3. Caramelize the bananas by adding them to the skillet. Cook for 1-2 minutes per side until golden and tender.
  4. If using rum or bourbon, carefully add it to the pan and ignite it with a lighter or match to flambé. Let the flames subside naturally.

Assembling the Pancakes

  1. Stack the pancakes on a plate, layering with a bit of sauce if desired.
  2. Pour the bananas foster sauce generously over the stack.
  3. Serve immediately and enjoy!
